Why HACCP, and what it means in a curry kitchen

HACCP, Hazard Analysis and Critical Control Point, is a structured way of identifying what could make your food unsafe and then controlling those points reliably. Every food business in the UK must have a food safety management system based on HACCP principles. Small operations can meet this through Safer Food, Better Business, which is HACCP made simple, but a busy curry restaurant producing large batches of sauce, holding food hot on a service line and reheating pre-cooked bases benefits from working through the full principles because those processes carry real, identifiable risk.

The point of HACCP is not paperwork for its own sake. It is deciding, before service, exactly which steps in your process are the ones that keep food safe, and making sure those steps happen every single time.

Mapping your process before you analyse hazards

Start by writing down the flow of each type of dish, because the hazards live in the steps. A typical curry kitchen has several distinct flows: raw meat curries cooked to order from a pre-made base gravy; bulk base gravy and onion masala cooked in advance and stored; boiled rice cooked in quantity and reheated; tandoori and grilled items marinated raw then cooked at high heat; and cold accompaniments such as raita and salad that receive no kill step. Each flow needs its own look because the controls differ. Batch-cooked base gravy, for instance, spends hours moving through the danger zone as it cools, which raw-to-order cooking does not.

Working through the principles

The seven principles translate into concrete kitchen decisions:

  • Conduct a hazard analysis. For each step identify biological hazards (bacterial growth, survival, cross-contamination), chemical hazards (cleaning chemicals, allergens, excess additives) and physical hazards (cardamom pods left whole, bone fragments, packaging).
  • Identify critical control points (CCPs). These are the steps where control is essential and there is no later step to catch a failure, typically cooking, cooling, hot-holding and reheating.
  • Establish critical limits. Give each CCP a measurable target, such as a core cooking temperature, a maximum cooling time, or a minimum hot-holding temperature.
  • Monitor the CCPs. Decide who checks, how, and how often, and use a probe thermometer rather than judgement.
  • Establish corrective action. Decide in advance what happens when a limit is missed, for example continue cooking, rapidly re-chill, or discard.
  • Verify. Check that the system works through probe calibration, record review and occasional swabbing.
  • Keep records. Document limits and monitoring so the control is provable.

The critical control points that matter most for curry

Four points deserve particular attention because they are where curry kitchens most often slip.

Cooking: raw chicken, lamb and fish must reach a safe core temperature. A brief high-heat sear in the tandoor can leave thicker pieces undercooked inside, so probe the centre of the largest piece rather than assuming char equals cooked.

Cooling of base gravy and rice: this is the highest-risk step in most curry kitchens. Large pots of masala and vats of boiled rice cool slowly, and cooked rice in particular can allow Bacillus cereus spores to survive and its toxin to form if it lingers warm. The control is to cool quickly, ideally within about ninety minutes, by dividing into shallow containers rather than leaving a full stockpot on the side, then refrigerate promptly.

Hot-holding: food kept hot on a service line must stay hot enough to prevent bacterial growth, checked with a probe, not left to drift.

Reheating: pre-cooked base gravy and rice brought back for service must be reheated thoroughly to a proper core temperature, once, and not repeatedly cooled and reheated across shifts.

Prerequisites: the foundation HACCP sits on

HACCP only works if basic good practice, the prerequisite programmes, is already in place. These include cleaning and disinfection schedules, pest control, personal hygiene and hand-washing, planned maintenance, waste management, supplier control and stock rotation, and separation of raw and ready-to-eat food. In a curry kitchen, allergen control also runs through everything, given the routine use of nuts, dairy, mustard, sesame and gluten. If the prerequisites are weak, the CCPs cannot compensate.

Making it live: monitoring, records and staff

A HACCP plan filed in a drawer controls nothing. Build simple daily monitoring into the shift: probe readings logged at cook, cool, hot-hold and reheat, fridge and freezer checks, and a calibrated thermometer that staff know how to use and clean between raw and cooked foods. Write corrective actions in plain language so a cook knows what to do at 2pm on a Saturday when a reading is out of limit, without needing to phone the owner.

Train every food handler in why the CCPs exist, not just the numbers, because a cook who understands that cooling rice slowly is what causes the classic "reheated rice" illness will treat the step seriously. Review the plan whenever you add a dish, change a supplier, buy new equipment or alter a process, and verify periodically by calibrating probes and reviewing your records. A curry kitchen that runs its HACCP as a working habit rather than a compliance file produces consistently safer food and walks into an inspection able to prove it.
