Sustainability in the Curry Restaurant Industry
Why sustainability now hits the bottom line
For decades the typical high-street curry house ran hot tandoors from mid-morning, deep-fried in oil changed on gut feel, and sent everything from onion skins to unsold rice to landfill. Rising energy bills, the separate food-waste collection rules now rolling out for businesses across England, and diners who read a menu's provenance as closely as its prices have turned sustainability from a poster on the wall into an operational discipline. The encouraging part is that most of the greenest changes also cut the two biggest controllable costs in an Indian kitchen: energy and food waste.
Taming the tandoor and the hob
The tandoor is the single hungriest appliance in a curry kitchen. A clay charcoal tandoor left glowing from 11am to 11pm burns fuel whether it cooks two naans or two hundred. Practical fixes make a real difference:
- Switch to a gas or electric tandoor with a lid, or fit an insulated lid to a charcoal one, so heat is not radiating uselessly into the kitchen between orders.
- Batch your bread and tikka production around service peaks rather than holding the tandoor at full heat through quiet mid-afternoon periods.
- Move slow-simmering base gravy and dal to induction rather than open gas rings, which lose most of their heat to the surrounding air.
Because a fierce tandoor also pushes up your extraction and air-conditioning load, taming it produces a compounding saving across the whole kitchen's energy use.
Cooking oil and ghee: recover, don't bin
Frying oil is a genuine sustainability lever. Used cooking oil should never go down the drain; besides being an offence under trade-effluent rules, it congeals into the fatbergs that block urban sewers. Registered waste-oil collectors will take spent oil for free or for a small rebate and convert it into biodiesel, closing a real loop. To make the oil last longer before it reaches that point, filter it daily through a fine mesh to remove burnt spice and batter particles that accelerate degradation, keep frying temperatures controlled rather than letting oil smoke, and store it covered away from light. For ghee and butter-heavy dishes, portioning by weight rather than eye stops the slow creep of over-use that inflates both cost and the carbon footprint of your dairy.
Cutting the mountain of food waste
Curry kitchens generate a surprising amount of avoidable waste: over-prepped base gravy at the end of the week, rice cooked in optimistic quantities, and trimmings from onions, ginger and coriander stalks. A few systems tame it:
- Track what actually gets binned for two weeks. Most kitchens discover one or two dishes or prep items account for the bulk of it, and can then right-size their batches.
- Use trimmings deliberately. Coriander stalks belong in the base gravy, chicken bones make a stock for pilau, and the outer layers of onions can go into the same foundation sauce that underpins most curries.
- Cook rice and breads to a par-cooked stage where volumes allow, finishing to order, so an unpredictable Tuesday does not end with kilos of pilau in the caddy.
Whatever remains should go into a separate food-waste stream for anaerobic digestion rather than general refuse, which is increasingly a legal requirement rather than a choice.
Packaging that survives a curry and the recycling bin
Takeaway and delivery have made packaging a front-line sustainability issue, and curry is a hard test: hot, oily, saucy and often carried a long way. The ubiquitous black plastic tray is particularly problematic because the carbon black pigment is invisible to the optical sorters at recycling plants, so most of it is never recycled. Better options include natural-fibre or bagasse (sugarcane pulp) containers, and recyclable aluminium trays with cardboard lids, both of which hold heat well and cope with grease. Where you still use plastic, choose a naturally coloured PP that sorting machinery can actually detect. Small operational touches matter too: making single-use cutlery, extra naan bags and sauce sachets opt-in rather than automatic removes a large volume of packaging that customers routinely throw straight in the bin.
Sourcing with a lighter footprint
Menu design quietly shapes your environmental impact. Vegetable-forward dishes such as tarka dal, chana masala, saag and bhindi are inherently lower-carbon than meat-heavy grills, and giving them equal billing on the menu nudges demand in a greener direction while widening appeal to vegan and flexitarian diners. On sourcing, buying rice, lentils, spices and tinned tomatoes in bulk cuts packaging and delivery trips; choosing British-reared chicken and lamb shortens supply chains; and building specials around seasonal British vegetables keeps produce fresh and local. Spices are the exception where imports are unavoidable, but buying whole spices in larger quantities and grinding in-house reduces both packaging and the flavourless staleness that leads to over-dosing.
Turning effort into a story customers value
None of this pays off fully if diners never hear about it. Once you have made genuine changes, say so plainly on the menu, website and delivery listings: where the chicken is reared, that used oil becomes biodiesel, that packaging is home-compostable, that food scraps are turned into energy. Avoid vague claims like "eco-friendly" with nothing behind them, which increasingly invite scepticism. Sustainability in a curry house is not a single grand gesture but a set of tightened routines around heat, oil, waste and sourcing, and the restaurants that treat it that way tend to find the ledger improving alongside the environmental credentials.
